Easy Crepes Recipe

Ingredients:


1 cup all-purpose flour

2 eggs

½ cup milk

½ cup water

2 tablespoons butter, melted

¼ teaspoon salt

Directions:

Step 1: Whisk together the flour and eggs in a large mixing bowl. Stir in the milk and water gradually to combine. Beat in the salt and butter until smooth.


Step 2: Over medium-high heat, heat a lightly oiled griddle or frying pan. Pour or spoon the batter onto the griddle, about 1/4 cup for each crepe. Tilt the pan in a circular motion to evenly coat the surface with batter.


Step 3: Cook for 2 minutes, or until the bottom is light brown. Turn and cook the other side after loosening with a spatula. Serve immediately.

Aloha Chicken And Rice

INGREDIENTS

1-1 ½ pound chicken tenders, diced into 1-inch pieces

¾ cup low sodium chicken broth

½ cup low sodium soy sauce

½ cup honey

2 cloves garlic, minced

1 ½ cups instant rice, uncooked

1 medium yellow onion, diced

1 bell pepper (any color), diced

1 (20 oz) can pineapple chunks

1 teaspoon crushed red pepper flakes (optional)

2 tablespoons chopped green onions, garnish

3-4 slices cooked bacon, chopped

PREPARATION

Preheat oven to 425°F. Coat a 9×13-inch baking dish with cooking spray.

In a separate bowl, whisk together chicken broth, soy sauce, garlic, and honey (add crushed red pepper flakes, if using).

Add rice, chopped onion, bell pepper, and pineapple chunks with juices, and chopped chicken pieces to baking dish. Pour soy sauce mixture over top.

Cover with foil and bake for 20 minutes. Stir ingredients together, then top with bacon pieces and return to oven, uncovered, for 10 minutes.

Toss again before serving and garnish with chopped green onions.

7 Up Pound Cake

Ingredients:


1 1/2 C Butter, softened

3 C Sugar

5 Eggs

1 t Vanilla Extract

2 t Almond (or Lemon) Extract

3 C All-purpose Flour

1 C Sprite, 7-UP, Or Sierra Mist

Instructions:

Preheat oven to 350 degrees.

Cream butter. Add sugar, 1 cup at a time, beating for a minute before adding and scraping the sides of the bowl after each addition.

Once all the sugar is added, continue to beat for an additional 4 minutes. Add eggs, 1 at a time, mixing after each addition.

Add the extracts and mix well.

Add the flour and soda alternately, starting and ending with the flour, mixing well after each addition and continuing to scrape the sides of the bowl.

Pour into a greased Bundt pan and bake for 1 hour to 1 hour 10 minutes, until the cake is firm.

If using a loaf pan, this will fill two pans, bake for 50-60 minutes, until the cake is firm.

TWO-INGREDIENT HOMEMADE BISCUITS

Ingredients


2 cups self-rising flour

1 cup whipping cream (I had heavy whipping cream on hand)

Directions

Preheat oven to 450 degrees F. Combine flour and cream in a mixing bowl, stirring just until blended. (The dough will be a little stiff.) Transfer dough to a lightly floured surface and knead 10 times. Roll to 1/2-inch thickness and cut with a 2-inch cutter. Place biscuits close together on a lightly greased baking sheet. Bake 10 minutes until golden brown. Add butter and ENJOY! We sure did! Makes 12 biscuits.

CHEESEBURGER BURRITOS

 Ingredients

1 1/2 lbs. ground beef

1/2 cup FRENCH’S® Mustard (any flavor)

1/2 cup FRENCH’S™ Tomato Ketchup

1/2 cup dill pickle relish [or chopped dill pickle]1 cup chopped tomato

1 cup shredded cheddar cheese

6 flour tortillas (10-inch)

Preparation

BROWN ground beef :in large skillet; drain. Stir in Mustard,

Ketchup and relish and bring to a boil over medium-high heat.

Reduce heat to low and simmer 5 minutes. STIR in tomato and cheese. Divide mixture evenly among tortillas. Garnish with lettuce and additional tomato and cheese, if desired. Fold in ends and roll up tortillas.

BIG DADDY’S BISCUITS

Ingredients:


2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 tablespoon white sugar

1/3 cup shortening

1 cup milk

Directions:

Preheat oven to 425 degrees F (220 degrees C).

In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.

Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.

Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.

Ingredients


2 1/2 cups unbleached Gold Medal all purpose flour

8 tablespoons leaf lard (cut into small pieces)

8 tablespoons Land O Lakes butter (cut into small pieces)

1/2 teaspoon kosher salt

2 tablespoons Domino sugar (optional)

1/4 cup vodka, cold

1/4 cup cold water

Instructions:


Combine all ingredients except the water and vodka in a medium bowl.


Blend with a pastry cutter. Be careful to not overwork the dough.


Sprinkle the water and vodka over the mixture and then, with a rubber spatula, use a folding motion to mix the dough together. You are looking for a consistency where the dough just holds together in a ball and is no longer powdery. Add additional water and/or vodka if needed to reach the desired consistency.


Divide the dough into two balls and flatten each into a disk. Wrap in plastic wrap and refrigerate for at least an hour.
