2 lb ground beef
2 packages kielbasa sausage, sliced into 1⁄2 inch pieces
2 garlic cloves, minced
1 onion, chopped
4 cups beef broth
2 cans diced tomatoes (14.5 oz each)
2 cups corn (fresh, frozen, or canned)
2 cups kidney beans (canned, drained and rinsed)
2 tablespoons chili powder
1 teaspoon cumin
Salt and pepper to taste
Chopped green onions for garnish
Instructions:
1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
2. Add the sliced kielbasa sausage to the pot and cook for an additional 5 minutes, stirring occasionally.
3. Stir in the minced garlic and chopped onion, cooking until the onion becomes translucent.
4. Pour in the beef broth, diced tomatoes, corn, and kidney beans. Stir to combine.
5. Add the chili powder, cumin, salt, and pepper. Bring the mixture to a boil.
6. Reduce heat and let simmer for about 30 minutes, allowing flavors to meld together.
7. Serve hot, garnished with chopped green onions as desired.
